No,  not the rantings of a self-destructive, brain-altered Hollywood star, but rather some small, everyday wins.  Reading about such frivolities diverts attention away from  the horrible happenings in Japan, etc.  Sometimes self-inflicted oblivion is the best tool for sanity. 

After trying out several gluten-free peanut butter cookie recipes I ended up creating my own version.  Not that there was anything wrong with the ones that we tried, but in general they were too gooey to be suitable for traveling/lunches.  Here is a picture of what mine turned out looking like.

And here is the recipe.

Gluten-Free Peanut Butter Cookies

2 Cups Peanut Butter        2 Cups Sugar       4 Eggs       ½ Cup Coconut       ½ Tsp. Baking Powder       1 Cup Gluten-free baking flour (I used Bob’s Red Mill)

 Mix ingredients, bake at 350 for 10 minutes. Before baking the dough will be very oily from the peanut butter, but still grease the cookie sheet first. For some reason the oil in the cookies doesn’t render them non-stick.  Allow cookies to cool on the cookie sheet for several minutes before moving them to a rack.

They are chewy, yet the outsides are crispy. They are definitely not tacky and the bottoms have a  lacy look to them.  Everyone here deemed them a win!

While driving home from the store the other day something pink caught my eye.  After turning around to investigate this was discovered:

The people living in this home had been Flocked!  This traveling cluster of kitsch makes its way around the greater Vancouver area as part of a fundraiser.  I love pink flamingos!  This group was courtesy of a neighboring school district’s cheerleaders.  There look to be about 30 or so of them.  I don’t know who owns the birds or how much it costs to send them visiting, but the concept is fun and a win in my book.

A miniature daffodil cluster burst into bloom this week in a tub near our front door.  Daffodils are utterly charming and these little guys are just too cute for words. Happy win!

This afternoon we’re planning on going to a matinée of Rango. Anything with Johnny Depp is a win.   In the meantime I need to be productive and get some housework done.  Cheers!

    I have those little daffodil looking bulbs. I adore them, but mine are just peeking out of the ground. I love yours!!!! The cookies sound delish (like I need cookies;-D) . The flamingos rock!!! Have fun with Johnnie!

When we lived in MIssouri one of the schools did the flamingo fundraiser; they flocked a house, then sold “insurance” to the neighbors to keep the flamingos off their yards, and made the homeowner who’d been flocked pay to have them removed! The radio stations reported flock movements every morning. Great fun!

    Gluten free pnut butter cookies? Easy. Here’s my recipe: 1 cup pnut butter, 1 cup sugar (or splenda baking blend), 1 egg. That’s it. Mix it all up. Drop onto a cookie sheet (makes 12) and mash flat. I use the bottom of a juice glass dipped in sugar. Bake at 350 for about 10 minutes. They’ll be firm but still chewy.

    Gluten free – spaghetti squash! Have you tried it? It takes sauce just like spaghetti.
